I made this carrot bran muffin recipe this morning. They turned out really good. Thanks Emily for a great recipe! I didn't modify the recipe too much except I left out the raisins (our fam is not a fan of cooked raisins) and left in the nuts (I loved the nuts - I would have added more if I had known). She mentioned that they turned out really moist so I left out maybe an 1/8 of a cup of milk). They turned out PERFECT! Not too sweet and moist enough, but not too moist.
